Pectins and cellulose are natural compounds with very interesting properties, including for the food, packaging, and pharmaceutical industries. Previous research conducted at the Department of Microstructure and Mechanics of Biomaterials of the Institute of Agrophysics, Polish Academy of Sciences, has shown that fruits and vegetables, as well as their waste, can be a valuable source of pectins, cellulose, and dietary fiber.
The project's objectives were:
- To create opportunities for interested entities to test samples for pectin and cellulose or dietary fiber content;
- To develop a database of pectin, cellulose, and dietary fiber content in fruits and vegetables available on the Polish market;
- To develop a mobile application that will provide the content of pectin, cellulose, and dietary fiber in species based on an image analysis;
- To enhance the qualifications of scientific staff in conducting research on cell wall polysaccharides;
- Social communication – to create sustainable channels for scientific communication with the public.
What tests are performed?
- Pectin content;
- Neutral detergent fiber (cellulose, hemicelluloses, lignin) content;
- Acid detergent fiber (cellulose, lignin) content;
- Hemicellulose content;
- Acid detergent lignin fraction content;
- Cellulose content.
